Budget Friendly Roast Beef Wellington

INGREDIANTS

1 medium onion

3 carrot’s

1 parsnip

5 cloves of garlic

2 sticks of celery

1 red pepper

6 mushrooms

1 egg

Handful of fresh spinach

1 abergine

1 small tin of tomato puree

Small teaspoon of chili powder

1 desert spoon of sweet tomato chutney

1 glass of red wine

1 roll of puff pastry

1 family pack of mince

Formaggio da pasta cheese – sprinkle of it

Serves 6 people

Method:

  • Preheat Oven to 180 degrees C
  • Peel and Chop all veg as finely or as roughly as you wish.
  • Place all the veg into a large deep dish and fry on a low heat with 2 lugs of olive oil.
  • Cover and let the veg softed.
  • Add your mince into a bowl, add the egg, tomato puree, spice, cheese and chutney and stir.
  • Roll your pastry out on a board.
  • Add red wine into the veg.
  • Cover pastry with the spinach leaves.
  • Add your mince mixture into the middle of the pastry.
  • Remove veg from pan and place on top of the mince.
  • Roll your mince around the mixture.
  • Pop in the oven for 45-50 mins.

To Serve:

Serve with boiled baby new patoes, fresh salad and fresh crispy bread.
